162 of 800: Noble Hill Winery in Stellenbosch

Located in Simondium, South Africa, Noble Hill Winery is perfectly situated in the heart of the Cape Winelands. Noble Hill offers an irresistible blend of rich history, exquisite wines, delectable cuisine, and warm hospitality. Noble Hill is the only organic grower on the Simonsberg mountain. Let's also not forget their mouth-watering Mexican-styled restaurant that in my opinion has the best guacamole in South Africa!

Location and Setting:

Noble Hill is ideally positioned up the slopes of the Simonsberg mountain. A triangle of 30 hectares of vineyards with varying aspects and elevations. As I arrived, I was immediately captivated by the beauty of the estate, which is so well complimented with lush plants, cacti, a lake and super views of the Simonsberg mountain.

A Storied Past:

This winery has deep roots, with vineyards dating back to the 18th century making this winery 300 years old. Originally established by French Huguenots, the estate has evolved over generations, combining Old World traditions with the vibrancy of the New World. From humble beginnings to a modern-day destination, Noble Hill embodies the true spirit of South African winemaking.

The oldest vineyard on Noble Hill was planted in 1987, making it a certified heritage vineyard. They grow the grapes for the Simonskop Chenin Blanc here, and the seal on this wine certifies the vineyard's status and special place in South Africa's viticultural heritage.

Winemaking Philosophy:

Noble Hill's commitment to producing exceptional wines shines through in every bottle. Their winemaking philosophy revolves around sustainable practices and a deep respect for the vineyards' natural environment. The winery embraces a minimal intervention approach, allowing the grapes to express their true character. Each wine tells a story of the region's terroir, skillfully crafted by Noble Hill's talented winemakers.

I met up with winemaker Kristopher Tillery, who is the winemaker who is also part of the family that owns this estate. Through his work in the cellar, Kris has gained experience in the production of expressive wines and more specifically took an interest in Mourvèdre and Syrah. His winemaking philosophy is intended to express the terroir of the Simonsberg mountains with minimal interference.

Kris says "We grow the grapes for all of our wines on our farm. We don’t purchase grapes from other growers or other regions to make our wines. Estate wine is important to us because it underlines our commitment to expressing terroir in our wines."

Wine Tasting Options

Noble Hill takes wine tasting to new heights, offering an array of tasting options that cater to all preferences. The Key Logo:

Unlocking a Tale of Heritage Have you ever wondered about the meaning behind the key logo gracing Noble Hill's wine labels? This iconic symbol holds a fascinating story rooted in the winery's history. The key represents the rich heritage and legacy of the estate, harkening back to its days as a farmstead owned by French Huguenots. The key was a symbol of the trust placed in the farm's caretakers, granting them access to the vineyards and the treasures they held. Today, the key logo serves as a reminder of Noble Hill's commitment to unlocking the secrets of exceptional winemaking and sharing their heritage with the world.

Today, these keys are represented on the wine labels and each key represents a grape variety that they grow on the estate.

The Cosecha Restaurant:

After the delightful wine tasting, I decided to indulge my palate further at the renowned Cosecha Restaurant which is on the estate itself. The restaurant's modern and inviting ambience perfectly complemented the mouthwatering menu, which showcases the best of locally sourced ingredients with a Mexican twist.

I can absolutely highly recommend the guacamole. It is made fresh, right in front of you and is the perfect starter for the table. I would also recommend the tacos. The menu is diverse and well-priced.
